Great news!!!


Mr. Joey got awesome news today! He may get to be discharged from physical therapy!!!!! Yippee! Our genetics doc wrote the orders in a way that they can't discharge with out his permission. We see him Thursday... i can't wait!!!! I am going to plead with him to let us D/c that appointment!!! :) Yeah Joey!!!!

Snow day!

Well, the Pfohl kiddos had there first real winter experience today! This is the first we have gone out and had NO temp regulations to worry with! They both did AWESOME!!! Last winter, they both turned purple the minute we walked out the door! Just another reminder of God's awesome power!



Joey about got lost in the snow a few times! It went to his hips!

I so wish I would have gotten this last week! This week, the girls had silly bugs! LOL! It's cute anyways! So, enjoy! -Mindy Oh... Abby is the one on the right in the darker pink!

I fear we are about to replace my 12 yr. old washer!!! It's squealing at me with EVERY load! Ug! Poor thing! We have put it through some effort.... I hate to see the day come! I hate to walk into sears either... whew!!! Better start saving!

Cooking show...

Well, I had a cooking show tonight! It was a lot of fun! We did the Hamburger Power cooking show. That's where you make three meals all at one time. Tonight, we made chili (served that... very yummy!), then we Made Italian Hogies and BBQ sloppy Joes. Those were both for the host to freeze for another day. It was nice to get out! I missed that! So, I'm thinking of doing two shows a month now just for some "me" time! I was going to do just one... but well... it was just a good day! :) Later all!

Something great!


OK, after having the disaster of the sopapilla's (even though they tasted good)... I will post something more positive from my kitchen experience... I did discover after talking with a family member that my oil probably got to hot... wasn't necessarily the loose flour that made my smoke! LOL! so... don't make your own deep fryer with out a thermometer! Now, on to happy thoughts! I was successful at my flaky buttermilk biscuits! We had these Tuesday night! My mother-n-law came over for dinner. Because of her cancer, she struggles to swallow, so I made her some gravy to go over them. I won the award for yummy that night! LOL! I love baking! I wish I could have a little shop or something that I bake for. cause, I'd just be in my happy place! LOL!

Sopapillas

Last night was Growth Group. I made Sopapilla's for our dinner since our main course was a mexican dishes... They turned out so yummy! Sopapilla's are basically a deep fried sweet bread. I put Powdered sugar on mine and then you are to put honey on them as you eat them.

They were a hit... but my family didn't agree at home!!! I don't have a deep fryer... so I made my own... Umm.. loose flour... well, mixed with oil... makes a really really big amount of smoke! LOL! So, here is my home made fryer sitting in the back yard surrounded by all thes snow! In Janurary... we had EVERY window int he house open trying to air out the smoke it caused! Awww... the price of a yummy dessert! :) too funny!

A day gone seriously wrong...

So, today, I went out with my sister. got the kids loaded... here it comes...

1. stop to pick up my sister... Abby has to pee. Unload her to go in and Joey looses it even though uncle Jimmy came out to play with him until Abby was done! So, he is sobbing horribly AND continues to loose it after I get back in the van!

2. Move on to the gas station. I didn't want to put my coat back on (can't stand driving in a coat) so, I think I can get out, throw 10 bucks in the tank and get back in... WRONG!!! go to get my coat and I trip... yes TRIP over the hose to the gas pump... No, I don't just stumble! I go AIR BORNE and do a belly smacker on the ground. Hurt like fire, but I decide to shake it off... cool as a cucumber. My sister looses it laughing when she sees I'm good not to mention... I now look like the abominable snow man with a white front from landing belly side down!

3. Go to finish pumping... slip on the frozen patch of snow and do a butt bounce off the ground yet a SECOND time!!! I'm telling you, some one watching probably thought I had been drinking! come on now! Who falls two times back to back!!!! Ug!!!!

4. Get back to my sisters for lunch and spill every other bite of soup down the front of my top! I give!!!!!!!!!!!!!!

Well, I am trying my hand at making home made biscuits that look like this!!! Unfortunately, they will not be for me! Just my kiddos! They eat bread like crazy and well... I go with it! :) They certainly don't have the "over eater" look about them and could actually stand a bit more meat on their bones... so... here's to hoping they turn out yummy and delicious!!! -Mindy

Loud noises in my house!!!!

Well, my dear husband got a table saw for Christmas from his mom. Let me tell you, with an attached garage, my house is getting a little noisy! Every once in awhile, I near jump out of my skin at the sound of his saws going! LOL! So, if you hear a screech from our street... it is only me being startled again by the buzzing saw! Actually, I am very excited. He is building a work bunch right now. When he is all done... his first project is making me a cook book stand! Wahoo!! I can't wait! I so hate just laying my cook books down. So, yippee!!! Saw away my dear! Puts me a step closer to my stand! :)

Blessings!!!

For a long time, we slept on the floor on a mattress. About a month ago, we were blessed with some one giving us a box spring and some one else a bed frame. Our mattress was too big, but we threw it on there any way and was grateful to not be sleeping on the floor... today... a brand new matteress that fits our bed showed up! God is faithful in EVERY THING!!!
For some reason, they thought they should test it out!
Yep, it is springy!! I can't believe I caught Abby completely air born in this picture! LOL!

Headaches...


Well, today, we got to stay home so mommy could rest. Joey has decided to get up every twenty minutes and then throw a tantrum about going back to bed! Normally, I'm good with no sleep. We've done it for two years... I SHOULD be used to it! But today, it did not fair well with me. I have had a splitting headache from the moment I got up! So, I stayed home and sat with my eyes closed as much as I possibly could! Felt kind of nice to not see light and not have loads of noise to make it worse! Here's hoping for a better day tomorrow! -Mindy

Happy memories made....

Today, I we made loads of happy memories... here they are....

  1. Watched Abby make her first snow angel! So precious
  2. Enjoyed morning snuggles with a giggly happy boy!
  3. Got to see my kids be "normal" kids at the museum today! First time we'd been since God's touched them... so much fun! Joey was alert and in to every thing and Abby was so interactive witht the other kids! What a joy!
  4. Celebrated that Abby's legs are strong enough we get to take a step down and no longer use SMO's for her braces but instead a much SHORTER less invasive version!
  5. Tucked my tired pumpkins to bed with smiles on their faces and shear joy in mommy's heart!

Struggles and Joys...

Right now, as life has come to a normal pace, and we don't have much medical stuff any more going on... we have begun to see the damage it has caused in our kids. Abby is the most apparent right now. She is very emotional, struggling to control those emotions and behaviorally acts like a two year old when she is upset. So, we have done loads of thinking, praying and wondering what to do along with trying every thing we know... finally we gave in and went to the doctor. Our Ped is a good Christian man. He feels after much talking, that she is going through her two's and three's because she is just now feeling like life is normal. So, he recommended two things... one, if she has a day with no tantrums, then she gets a sticker. We started small. She only has to be good two days for her reward. Her reward is a date with either mommy or daddy. It could be for ice cream, could be play time at the park, etc etc. Some thing inexpensive that makes her feel like she is important. Today, she got her second sticker! She was so excited she was BOUNCING through the house. She has chosen to go with daddy to the Chocolate Moose and have an ice cream cone. Super man ice cream to be exact! 2nd... we are teaching her to pray when she gets upset. We used to do this with the kids when they were sick and we were in fear of the out come. We taught them to pray and rely on God... but I hadn't put it with her tantrums yet. She's doing AWESOME! She comes to me to say "I need to pray." It's so effective. I was thinking though as I listened to her innocence and the tone that she would take as she sweetly asked Jesus for help... I realized how much I need that in my life. At the moments I can't do it on my own power... I often forget to stop and pray. So... it's been a real life lesson for me watching her! She has a heart of God and faith bigger than any I have ever seen!!!

It's in proper placement...

Well, today was a good day! We finished up cleaning Joey's room and moving it around so it's nice and cozy and HIS!!! He was having a blast with his toys tonight. His room was a catastrophe. It used to belong to Jeff and I. We hadn't taken all our stuff out of the closet etc... so, we did so tonight and made it all his own. I love it when a task is done! :) Have a good night all! I'll sleep better knowing I don't have to think about that task another day!

Digging through closets...

Well, I might be having an upset tummy... but it sure hasn't stopped me! I'm digging through closets! Doing laundry. About to start dishes. Did an art project and a little school with Abby. Jeff and I played a princess game with Abby while Joey napped... ahhh.... no rest for the weary! I'll tell ya that! Actually, if I sit down, I'm asleep! So, I must keep moving!!!!

Joey has a temp off and on, Miss Abby has been running to the bathroom for emergency "runs" if you get the picture!!! My tummy is now upset... guess the Pfohl kids and their mama are in for the day! A day for peace...


Well, my husband would be the first to tell you that if my house is out of order, I'm in a fowl mood! So, today, we took on the cleaning up of Christmas! I'm laying on a spotless rug right now typing on his lap top! It's refreshing! I feel so HAPPY at the moment!!! I'm one of those spastic people. When I do laundry... it's very orderly. No mixing of colors, no mixing towels with shirts, etc. When I put away laundry, it is done in a manner of long sleeve dress shirts, short sleeve dress shirts, long sleeve tees, short sleeve tees, dress pants, casual pants, etc etc. Undies are folded, socks are tucked and matching! Oh, did I mention this drives him batty? Awww... it has taken me a long time to get him to realize my need for these things! He has finally come to realize it is a good thing to allow me to be orderly! :) There is peace in the house tonight!

Good bye little tree! Until next year! You'll make great marshmallow fires this summer! Mmm!!! I can taste it already!!!!

The whirl wind is over...

Well, the holidays have come to an official end! I think I am grateful. I'm ready for a break. Today, our goal is to take down our Christmas tree and get back to "norm" around here. We didn't get school done yesterday, so I probably will do that as well with miss Abby. So looking forward to being back in "normal" routine.
